Happy What I Ate Wednesday (WIAW)! How is your week going so far?
For breakfast around 7:00 am I had some
four three seed porridge with 3 tablespoons of millet, 1 tablespoon of amaranth, and 1 tablespoon of chia seeds. Made with homemade almond milk, cherries, and topped off with some almond butter.
Around 10:30 am I took a much needed break from studying and went out for a glorious 5 mile/50 minute run. I did a few 8 minute long intervals at a pace slightly below my “sprinting” pace, and boy did it make me want to puke!! I can certainly tell when stress from school/exams affects my training. I have days where I do not recover as well, and days where I just can’t push it as hard. I just have to be in tune with it, and pull back on my training when I feel like my body needs a break.
After my run, I heated up some leftover cocoa-coconut chili and jalapeno spoonbread, topped with Mexican cheese and Cholula hot sauce.
While studying I roasted some sweet potato wedges to take with me as an afternoon snack that I ate around 3:30 pm between class and studying some more. I tossed the wedges with 1 teaspoon of melted coconut oil and salt, then roasted them at 400 degrees F for 40 minutes, flipping half way through. They were a little too browned, so next time I think I’ll do 30-35 minutes. I put a teaspoon of sunflower seed butter on the side for dipping.
Before taking my OChem exam I had some leftover thai quinoa salad at 6:00 pm that I packed with me. (There are some meatballs hiding under the previous night’s version on the left).
And at 8:30 pm I had a much needed, post exam glass of wine with the fiance. Ahhhh…so glad to get it over with.
